English Muffins
These can be made with a bread machine or by hand.

Makes 10-12 muffins
Ingredients:
1/4 c. water
1/2 Tbsp baking soda
1/2 c. milk
2 Tbsp vegitable oil
2 tsp sugar
1/2 tsp salt
2 c. breadflour
2 tsp yeast
cornmeal
Dissolve the baking soda in the water (if you're making these by hand, disolve the yeast too). Add the remaining ingredients except the cornmeal into a bowl and mix. (Add to bread pan and set for dough stage, press start if using a machine). Mix until a smooth dough ball forms. Cover dough and walk away for an hour. (I usually walk away and work on something else, then find it later and rediscover my baking project when I get hungry).
Once dough doubles in size, punch it down and let it rest for 5 minutes. Sprinkle a baking sheet with cornmeal.
Roll out the dough to 1/2 thick and cut out circles with a jar or glass rim (roughly 3 inches). Set rounds on the baking sheet. Cover with a towel and walk away again, for about 45 minutes.
Cook muffin rounds in a pan on the stove (yes, on the stove, not in the oven). Cook until muffin bottoms are nicely browned, then flip them over and cook the other side. These take about as long as a pancake to cook.
